Fried Zuccihini
1 zuccihini
1 cup seasoned bread crumbs
2 tablespoons butter or olive oil
1 egg

Slice up the zuccihini.  Put the bread crumbs in a bowl.  
In a seperate bowl, beat your egg.  In a medium-size
frying pan, melt your butter or heat the olive oil.  Dip the
zuccihini slices in the egg mixture, then dip and coat
with the bread crumbs.  Put in frying pan, when golden
brown flip, when both sides are golden brown, they are
done.  You can also use eggplant, summer squash or
cucumbers instead of zuccihini.
