Freezer Spaghetti Sauce
4 onions,chopped                                       4 cloves of garlic,minced
2 green bell peppers, chopped                 1/2 cup olive oil
16 cups roma tomatoes, chopped           1 tablespoons salt
2 tablespoons fresh oregano                    1/2 cup fresh parsley
2 tablespoons fresh basil                            3/4 teaspoon pepper
1/4 cup sugar                                                  6 ounces tomato paste
1 tablespoon brown sugar


In a large sauce pan, saute garlic, onion, bell peppers and oil.  
Cook until onion is transparent.  Add tomatoes, oregano, basil,
parsley, sugar, salt and pepper.  Cook 2-4 hours on low.  Stir
frequently.  Let sauce cool.  Pour into quart jars or freezer
containers.  Fill about 1 inch from top of the jar.  Freeze.  When
ready to use, un-thaw, stir in cans of tomato paste.
